Ingredients

  • Pork shoulder, boneless, trimmed and chopped    :-225 grams
  • Onion sliced, vertically    :- 150 grams
  • Kosher salt    :-2 grams
  • Chili powder    :-2 grams
  • Paprika    :-2 grams
  • Cumin, ground    :-1 grams
  • Black pepper    :-1 grams
  • Tomatoes, crushed    :-1 grams
  • Cider vinegar    :- 60 ml
  • Extra-virgin olive oil     :- 10 ml
  • Cider vinegar    :- 10 ml
  • Green cabbage, thinly sliced    :-50 grams
  • Red cabbage, thinly sliced    :-50 grams
  • Plain yogurt    :- 60 ml
  • Mayonnaise    :- 30 ml
  • Garlic, minced    :-5 grams
  • Whole-wheat burger buns, toasted    :- 6

Garnish

  • Onion sliced (optional)
  • Dill pickle slices (optional)
  • Tomato slices (optional)
  • Lettuce leaves  (optional)

 Accompaniments

  • French Fries or wafers
  • Tomato Ketchup
  • Mustard sauce

Preparation

  1. Pre Heat a oven over medium heat.
  2. In a heavy bottom skillet, add pork and cook for 2 minutes, add onion, cover and cook for 5 minutes, stirring continuously, add salt and chili powder, paprika, cumin, black pepper and cook for a minute, stirring continuously, add tomatoes and vinegar to pan. Reduce heat to medium, uncover and cook for 20 minutes or until pork is tender, stirring frequently.
  3. Combine olive oil and 2 teaspoons vinegar in a bowl, add green, red cabbage and toss gently to coat.
  4. In a bowl add yogurt, mayonnaise, garlic and spread about 1 1/2 teaspoons yogurt mixture onto each bun half.
  5. Top bottom half of each bun with 1/4 cup pork mixture, 1/4 cup cabbage mixture, and place half of bun on top.
