Ingredients

  • Butter    :- 15 ml
  • Onion, chopped    :- 75 grams
  • Chicken breasts, boneless, chopped     :- 250 grams
  • Vegetables, mixed , boiled    :- 280 grams
  • Water    :- 360 ml
  • All purpose flour    :- 15 grams
  • Chicken broth or Chicken stock    :- 400 ml
  • Salt    :- 1 grams
  • Black pepper    :- 1 grams
  • Bay leaf    :- 1
  • Flour tortillas, cut into 1/2-inch strips    :- 8 (6-inch)

Garnish

  • Parsley, chopped fresh

Accompaniments

  • Garlic bread

Preparation

  1. Melt butter in a Heavy bottom skillet over medium heat, add onion and sauté for 5 minutes or until tender.
  2. Add chicken, vegetables and for cook 3 minutes, stirring continuously.
  3. In another bowl combine water, flour, and broth or stock.
  4. Add the broth or stock mixture into chicken mixture, add salt, pepper, and bay leaf and bring to a boil.
  5. Reduce heat, and simmer for 3 minutes, add tortilla strips, and cook for 2 minutes or until tortilla strips soften.
  6. Remove from heat and discard bay leaf.
  7. Transfer it to serving bowl, garnish with parsley chopped, accompany with garlic bread and serve immediately.
