Ingredients

  • Sweet potatoes, peeled and cut into sticks    :- 750 grams
  • Olive oil    :- 15 ml
  • Salt    :- 3 grams
  • White pepper    :- 3 grams
  • Cumin, ground   :- 3 grams
  • Bread crumbs, dry    :- 125 grams
  • Chicken breast cut into chunks    :- 750 grams
  • Honey mustard    :- 150 ml

Garnish

  • Parsley, chopped

Accompaniment

  • Sweet potato
  • Mustard sauce

Preparation

  1. Preheat oven to 220 degree C.
  2. In a mixing bowl, toss sweet potatoes with olive oil, salt and cumin. Spread on an oiled baking sheet.
  3. Place bread crumbs in a bowl.
  4. In a large bowl, combine chicken chunks, salt, pepper, honey mustard and toss to coat thoroughly.
  5. Now take single piece of chicken chunks into bread crumbs and press on all sides to adhere. Spread on an oiled baking sheet, similarly do with the remaining chunks.
  6. Bake sweet potatoes and chicken for about 20 minutes, turning occasionally.
  7. Increase heat to 230°C. and bake for 5 minutes now remove chicken, once it’s golden and cooked through.
  8. Cover with foil to keep warm until ready to serve. Cook sweet potatoes until golden brown and crisp, 10 to 15 minutes longer.
  9. Transfer gently to serving dish, garnish with parsley chopped, accompany with sweet potato, mustard and serve hot
