Ingredients

  • Sweet potato, roasted and cooled    :- 100 grams
  • All-purpose flour    :- 620 grams
  • Salt    :- 5 grams
  • Sugar    :- 80 grams
  • Baking soda    :- 3 grams
  • Baking powder    :- 15 grams
  • Buttermilk    :- 720 ml
  • Eggs    :- 3
  • Butter, melted    :- 30 ml
  • Honey    :- 30 ml
  • Cinnamon, ground    :- 5 grams
  • Nutmeg, ground    :- 3 grams
  • Spiced walnuts    :- 120 grams
  • Peach Butter    :- 180 grams

  • Peaches sliced

Preparation

  1. To Prep the Sweet Potato: Preheat the oven to 200 degree C. Using a fork, prick your potato and place it on a baking sheet, bake until tender, about 45 minutes. Set aside to cool, peel and mash the sweet potato, place it in a bowl.
  2. In a bowl, add flour, salt, sugar, baking soda, and baking powder.
  3. In a separate bowl, whisk together the buttermilk, eggs, and melted butter, and then add this to the dry mixture.
  4. Add honey, cinnamon, and nutmeg to sweet potato bowl and mix it well. Add this mixture into the pancake batter. Let the batter stand for 2 hour.
  5. Heat a heavy bottom non-stick pan over medium heat. Working in batches, add batter about ½ cup and cook until the bubbles appears on the surface of pancake for 2 to 3 minutes. Flip and cook the other side until golden for 1 to 2 minutes.
  6. Transfer to serving dish, garnish with peach slice, accompany with Peach Butter and Spiced Pecans and serve hot.
