Ingredients

  • Radishes, trimmed    :- 1 cup / 116 grams
  • Neufchatel cheese or any Cream cheese    :- 1/2 cup / 115 grams
  • Splash of lemon juice
  • Parsley, chopped    :- 1 tablespoon / 3.8 grams
  • Chives or Scallions, minced    :- 1 tablespoon / 5 grams
  • Capers, rinsed    :- 1 1/2 tablespoons / 12.9 grams
  • Black olives, sliced or chopped     :- 5
  • Salt   :- to taste
  • Pepper   :- to taste
  • White sandwich bread    :- 2
  • Baby Spinach or Arugula (cooked)    :- few leaves

Garnish

  • Black olives

Accompaniments

  • French Fries
  • Mustard Sauce
  • Mayonnaise
  • Ketchup

Preparation

  1. Place the radishes in a food processor, and pulse until they are finely chopped.
  2. In a small bowl, stir the cream cheese to loosen. Add the radishes, lemon juice (just enough to make the mixture spreadable), parsley and chives. Stir to combine. Gently fold in the capers and black olives. Season with salt and pepper.
  3. Spread the radish filling on one slice of bread, top it with baby spinach or arugula, and sandwich with another slice of bread.
  4. Cut into and enjoy.

Note:-  To give this recipe a more more flavor, increase the Neufchatel cheese to 170 to 225 ounces.
